Chicken and Potatoes

I like the easy recipes - the ones that you just have to sort of throw into the oven and pull out after a while and they taste good, fill you up, and just work as a meal.
My wife loves these meals because...well, probably because I'm willing to cook them. She makes all these amazing meals but I don't have the same patience that she does. I go for the simple - but nice. So here's one that also works (try this one and also try the Salmon and Rice one!)

1 whole chicken cut in 8 (or whatever pieces you prefer)

4 Idaho potatoes - cleaned and sliced thin

Olive oil and spices

1 sliced onion

2 cloves garlic
I fry the onions and garlic in a little bit of oil until they are done. I lay out the potatoes at the bottom of a wide baking pan. Pour the onions and garlic mixture on top of the potatoes. Sprinkle with salt and paprika and mix it around. If the potatoes aren't covered, add more olive oil.
Place the chicken on top of the potatoes and sprinkle paprika, onion powder, dill and garlic powder over the chicken pieces.
I cover and bake in the oven for about 2 hours at 350 degrees, taking the cover off for the last 15 or 20 minutes.
This one-pan recipe works like a charm.
About 15 minutes before it is done, I take a package of frozen broccoli out of the freezer. I cut up and fry another onion and then open a can of mushrooms and mix that in with the onions, then I add the package of broccoli and cook it for another 10 minutes or so until the broccoli is warm and cooked.
This is a winner meal and you only have two pots to clean!
