Special Dinner for Two?
Here are a few ideas to make the evening more special.
Of course there are the old favorites...your most beautiful candlesticks, long tapered candles, your fanciest china, and cloth napkins and perhaps flowers to brighten the table.
Then, how about this easy-to-make meal:

Steak for Two
Marinate the steaks with your favorite sauce. While the Roast Potato Medley is cooking, grill the two steaks on an outdoor grill or in the broiler. Sprinkle with spices and turn over as needed.
Roast Potato Medley

Sauté one onion in olive oil. |
|
|
Boil two potatoes until soft enough to cut easily. |
In a roasting pan, add 3 Tbs. of olive oil.

Cut potatoes to chunks. |
|
|
Cut one large sweet potato into chunks. |
|
|
Pour onions and oil over potato mixture and mix gently. |
|
|
Sprinkle with garlic powder, onion powder, salt and paprika. |

Add other spices, if desired. |
Bake for 40 minutes at 350 degrees, or until potatoes are roasted nicely
(mix a few times to ensure consistent cooking).
Fresh Spinach and Cranberry Salad
Combine one package of fresh spinach (washed and shredded), with 1 cup of cranberries and 1/2 cup of slivered almonds. In a separate bowl or cup, prepare the following dressing: 1/3 cup Balsamic vinegar with 3/4 cup of olive oil. Add 1/2 cup of sugar and 1 tsp. of salt. Right before you are ready to serve, pour the dressing over the salad.
Fresh Garlic Bread
Slice one loaf of French bread and smear margarine on both sides. Sprinkle with garlic powder and place in oven for a few minutes until lightly toasted.
Light the candles and enjoy.
