Salmon and Rice
By: Jerry
My wife loves this recipe and loves even more when I make it. I like it because it is really simple and best of all, easy to clean up after. I mean, if I'm going to prove myself as a great husband - how can I leave her the dirty dishes after the meal, right?
So, here's what I do:
-
1 salmon fillet cut into small strips - about 2 inches wide
-
1 cup rice (serves around 3 people) - I like rice!
-
Olive oil and spices
-
1 and 3/4 cups water
-
1 diced onion
-
2 cloves garlic
I fry the onions and garlic in a little bit of oil until they are done. I add 1 cup of rice to the mixture and fry for a few minutes, stirring constantly.
I pour the mixture into the bottom of a wide pan and add 1 and 3/4 cups of water. I place the strips of salmon fillet on top of the rice, and sprinkle them with olive oil and paprika and onion powder.
I bake in the oven for about 1 hour at 350 degrees.
This one-pan recipe works like a charm.
About 15 minutes before it is done, I take a package of frozen broccoli out of the freezer. I cut up and fry another onion and then open a can of mushrooms and mix that in with the onions, then I add the package of broccoli and cook it for another 10 minutes or so until the broccoli is warm and cooked.
This is a winner meal and you only have two pots to clean!
